Soy Applesauce Cake

1 1/2 Cups all-purpose flour
1 Cup soy flour
1 3/4 cups sugar
1/4 teaspoon baking powder
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 cup soy oil
2 Cups applesauce
2 eggs
2 egg whites
1 Cup raisins
1/2 Cup walnuts, finely chopped

 

Preheat oven to 350F. Grease a 9X13 inch baking pan.

 

Mix the dry ingredients together thoroughly.  Add shortening and applesauce.  With an electric mixer, beat for 3 minutes on medium speed.  Add the eggs and beat for an additional 2 minutes.  Fold in the raisins and nuts into the batter.  Pour into the baking pan.  Bake for 45 to 50 minutes until cake surface springs back when touched lightly.
