Overnight Oats
2 cups old-fashioned oats
2 cups Soy Milk
2 tablespoons raisins
2 teaspoons grated orange rind
1 teaspoon cinnamon
1/8 teaspoon salt
3 cups diced seasonal fruit
1/4 cup chopped, toasted nuts (optional)
In a large bowl or storage container, mix together all ingredients except fresh fruit and nuts. Cover and refrigerate overnight. The next morning, stir in fresh fruit and garnish with nuts, if desired.
