Ingredients:
3/4 Cup flour
3/4 Cup soy flour
1/2 teaspoon salt
1/3 cup
4 to 5 tablespoons cold water
Makes two 9-inch pie crusts. Preheat the oven to 400F. Mix the flour and salt thoroughly. Cut the shortening into the flour mixture using a pastry cutter or a fork until the mixture is crumbly.
Add the water, a tablespoon at a time while mixing gently. The dough should be just moist enough to cling together when pressed
Shape the dough into two balls. Roll each ball out on a lightly floured surface until the dough is at least one inch wider all around than the pie pan. Fold each circle of dough in half and lift into pie pans. Open the dough and fit it gently into the pan. Trim irregular edges and shape pastry rim as desired. Prick the bottom and sides with a fork. Bake 12 to 15 minutes until golden brown.
